SHRIMP & CHICKEN FRIED RICE

The thought never ocurred to me that I could make my own fried rice until my mom made it a few years ago.  She loves to cook...or she used to love to cook.  Now that my sibs and I are all grown, she reminds us that we should be cooking for her.  Anyway, this is another recipe that I got from my mom, and then put my own spin on it. 


INGREDIENTS:
Olive oil 
1 cup fresh or frozen broccoli florets
1/2 yellow onion (sliced thick)
1 cup of shredded or Julienned carrots
1lb. Shrimp
2 boneless skinless chicken breast
or 4 chicken tenderloins (cut into chucks)
2 unbeaten eggs
1 pk. fried rice seasoning mix (your favorite brand)
2 tbsp. soy sauce (your favorite brand)
2 cups of long grain rice or brown rice

CRUEL WEATHER, WARM CHILI!

Floridians can agree on one thing: we hate cold weather!  I know compared to what people up North and in the Midwest are going through, our "cold" weather is nothing.  But when you're used to 70 degree weather in the winter, you tend to get a little cranky when it gets down to the 20's and 30's.  The best part of our five "real" days of winter is a good bowl of warm anything - chicken or tomato soup, beef stew or dumplings. 

My favorite is a big bowl of hearty chili and brown rice.  I promised to share my skillet chili with you a couple of months ago, so here goes...
